I want to introduce you all to one of my favourite recipes, that conveniently enough, is also very healthy. It’s very easy to make, and will feed you for awhile.
My mom started making this recipe as a family dinner years ago and we all really enjoyed it. When I had my own apartment, I would make it all the time and then freeze half of it as it would last me for a week and a half to eat on my own and after 4 or 5 days, you kind of need to switch it up a bit. I’m okay repeating foods during the week, but I like to take advantage of having more time on weekends to eat other things.
I decided to make this for D and I’m glad I did because I think it’s one of his absolute favourite things to eat now. And the proof is in the pudding, he would eat it for lunch and dinner every day if I didn’t stop him – because I need to enjoy it too, ya know??
I think it will end up being a recipe in our regular rotation as we both like it so much and it’s full of super healthy ingredients, especially all the cumin! If you haven’t read up on the health benefits of cumin, you should! Therefore, I decided to share this one with you guys so that you can also enjoy the amazingness of this recipe!
Tip #1: You can reduce the olive oil in the dressing from 1 cup to 3/4 cup as 1 cup is quite a lot.
Tip #2: I always add more chicken to the pot as I find the ratio of lentils to chicken is a bit off.
